MY CURRENT GO-TO KALE SALAD

Ingredients:

for the salad:
- 1 to 2 large bunches of kale
- 3/4 cup pecans
- 1 apple
-3/4 cup pomegranate seeds
- salt
- 1 tablespoon coconut sugar

for the dressing:
- 1 clove of garlic, minced
- 2 tablespoons lemon juice
- 2 tablespoons apple cider vinegar
- 1/2 cup tahini
- 1 1/2 tablespoons maple syrup
- salt
- pepper

This kale salad features sliced apples and pomegranate seeds as well as a super yummy, creamy, and slightly sweet dressing. It makes for a sweet and crispy fresh salad that you will literally become addicted to.

I added measurements to the recipe but honestly, I just eyeball everything, you can't really go wrong here. If you like less apple or more pomegranate or whatever feel free to mess around with this recipe. You can also add some extra ingredients like avocado, green onions, or pumpkin seeds!

to make the salad:

Start by combining all dressing ingredients, with salt and pepper to taste. If you want it less sweet add less maple syrup and if you want it even creamier you can add olive oil or avocado oil. If the dressing is to thick you can add some water. Once all your ingredients are in a bowl whisk with a fork or mini whisk, or place everything in a mason jar and shake until incorporated. Set aside.

Tear the kale into bite-sized pieces and remove any stems or hard pieces. Place this in your big salad bowl and pour the dressing on top. Massage the dressing into the kale for a few minutes. The kale should become darker and glossier in appearance. When the kale is soft and the dressing is incorporated your salad base is ready.

* massaging your kale is always the most important step when making a kale salad or anything that requires kale because this step breaks down the cell structure making the kale soft and less bitter

Moving onto the salad ingredients, add your salt and coconut sugar to a non-stick pan and let the sugar meltdown. Then add your pecans, tossing and toasting. Once the pecans are coated in sugar and nice and crispy, turn off the heat and set aside. (You don't have to toast your pecans, you can ignore the salt and sugar and just add raw pecans to the salad but I think this step really takes the salad to a whole other level).

Thinly slice or dice your apple, I prefer to slice it but if you like chopped salads feel free to chop her up.

Then add your pomegranate seeds, sliced apple, and toasted pecans to your massage kale. Mix her all up and add salt and pepper to taste.

Instead of getting the scoop on Devon Lee Carlson or the new SSENSE sale, it was some old person I never heard about or some crazy designer that only makes clothes for the elite.
