10 organic medijpool dates

4 tbsp peanut butter (make sure you a brand that only has peanuts as the ingredients)

½ cup chocolate chips

1 tsp coconut oil

3 tbsp shredded coconut

Other optional topping ideas: crushed peanuts, flakey salt, crushed pretzels, crushed peppermint, cacao nibs

This is my go-to after-dinner dessert and I’ll admit I am literally addicted. You can make one at a time or 100 at a time (which is what I find myself doing), but realistically I usually make like ten.

The key ingredient to this recipe is dates, so get your hands on some.

Pitted or unpitted, doesn’t matter, we cut them open anyway.

Everything else is pretty interchangeable.

You can substitute peanut butter for your favorite nut butter, add flaky salt or coconut flakes, or whatever your heart desires.

You can even Christmas-ify them by adding crushed peppermint to the top.

So whether you need a quick sugar pick me up, or want something chocolatey with your after-dinner tea; these are the way to go.

Instructions: 

  1. Start by pitting your dates if necessary and split them open without fully ripping them apart. If your dates are already pitted, simply cut a slit in them. Then place each date on a plate with parchment paper.
  2. Using a knife or a small spoon add peanut butter to the inside of each date. Around ½ tbsp, but measure with your heart. Feel free to sub the peanut butter for almond butter, cashew butter, or granola butter to stay nut-free.
  3. Melt your chocolate chips and coconut oil together in the microwave at 30-sec intervals until completely melted. Make sure to stir between each interval.
  4. Either use a spoon to drizzle the chocolate over your date, or dunk the date into the chocolate mixture. It all depends on how chocolatey you would like it.
  5. Sprinkle your shredded coconut over all the dates, or whatever topping you would like. I usually do half my dates with coconut and the other half with flakey salt.
  6.  Once your dates are customized to your liking, pop the tray in the freezer and let them rest for at least 15 minutes. Then whenever you are ready to enjoy one, just take it out of the freezer! 

This recipe is super quick and easy and super customizable, which I love. Before I eat my date I like to let it sit out of the freezer for a couple of minutes so it isn’t as hard, I find it becomes the perfect chewy consistency.

Instead of getting the scoop on Devon Lee Carlson or the new SSENSE sale, it was some old person I never heard about or some crazy designer that only makes clothes for the elite.
