Here is part one of my two articles about the Summer Mermaid smoothie from Erewhon. Today is the recipe (especially for my girls @matchahermes and @lavendernymphe because I can't leave my it girls hanging!), and tomorrow I'll post my entire review, notes, and overall thoughts about this smoothie. I have a few.
Anyways, you can get many of these ingredients at your local grocery store or even in your own kitchen. But for some of the fancier ones and specific brands, I've linked them below from Amazon, so you can make this smoothie exactly how it is made at Erewhon.
BENEFITS OF THE INGREDIENTS:
Banana: contain fiber, potassium, and vitamin C (aka great nutrients and great for heart health)
Pineapple: super anti-inflammatory, has plenty of nutrients and is really high in vitamins and minerals
Cucumber: rich in electrolytes and super hydrating (and water is great for your skin)
Dates: high in fiber, helps lower your blood sugar, good source of fiber
Sea Moss: rich in vitamins and minerals: read about the benefits in this article
NuttZo Power Fuel Nut Butter: a great source of protein and low in sugar
Collagen: improves skin hydration and elasticity, but it is also great for hair and nails
Tocos: strengthens your skin barrier from the inside out
Spirulina: a superfood that has anti-inflammatory, antioxidant, antimicrobial, and cholesterol-lowering properties
Oat Milk: a great source of B vitamins which helps the enzymes in your body do their job
Coconut Water: super hydrating, high in potassium, good for your skin
Coconut Cream: a healthy fat that also has protein and iron
Pitaya Powder: high in fiber, vitamin C, rich in antioxidants, omega 3, and omega 6 essential fatty acids
TO MAKE:
Combine all the ingredients in a blender except the coconut cream and pitaya powder. Combine those two ingredients on the side to make the pink line in your cup.
A quick note is this is how they make the smoothie at Erewhon, but I have a few notes about how I personally like to make it.
First off, I'm not a huge fan of coconut water and oat milk in a smoothie, so when I make my version at home, I tend to either do oat milk OR coconut water. If you also do this, just add around a cup-ish of the liquid.
Another personal note is that I don't love coconut water in my smoothies; I prefer non-dairy milk to give it extra creaminess. So I like to make it with just oat milk. However, the coconut water adds to the flavor, which I will talk about more tomorrow when I give you guys my overall review.
TO ASSEMBLE:
Spread the pink coconut mixture around your glass and then pour in your blue smoothie.
Erewhon also likes to top theirs with an extra scoop of coconut cream, pitaya powder dusting, and a granola sprinkle. This is optional, but I recommend the granola if you like that extra crunch.
