HEALTHY SPINACH MUFFINS

Ingredients:

2 1/4 cups almond flour
1/2 tablespoon chaga
1/2 tablespoon lions mane
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
4 cups spinach
2/3 cup monk fruit sugar (or coconut sugar)
1/2 cup unsweetened almond milk
1/4 cup coconut oil, melted
1/4 cup applesauce
1 teaspoons vanilla extract
1 banana

These spinach muffins are definitely my latest obsession. I wanted something that I could have as a snack or with my coffee that would satisfy my sweet tooth and still provide lots of nutrients. It wasn't until I was staring at this bag of spinach sitting in my fridge that I decided to make a muffin out of it.

These muffins are vegan, gluten-free, refined sugar-free - basically Gwyneth Paltrow approved.

Because duh.

So in our everlasting quest for ultimate well-being and a vibrant lifestyle, we turn to nature for inspiration. Enter some of my five favorite enchanting superfoods - chaga, lion's mane, spinach, coconut oil, and monk fruit sugar - which together create a magical elixir of vitality and nourishment.

If you made the TIGG date cake, you know I'm a sucker for adding adaptogens to everything I can. In both recipes, I used chaga and lions mane.

Chaga, a stylish fungus that grows on birch trees, is the ultimate wellness gem. This adaptogenic fungi is loaded with antioxidants and immunity-boosting properties.

Our second stunning mushroom, with its gorgeous, shaggy appearance, is the secret weapon for a sharp and focused mind. Lion's Mane is known to improve memory, concentration, and overall cognitive function.

But the main ingredient in this recipe is of course, spinach. A timeless and nutrient-packed green, is the ultimate green goddess. This leafy wonder is full of vitamins, minerals, and antioxidants that support your eyesight, bones, and energy levels.

For some healthy fats, I use coconut oil. This fragrant oil, extracted from the heart of coconuts, is the multitasking queen of the wellness world. With healthy fats that boost metabolism and support brain function, coconut oil is also a major beauty secret for luscious hair and glowing skin.

Lastly, as my sweetener, I use monk fruit. If you have never heard of monk fruit sugar before this calorie-free sweetener, made from the monk fruit, is the perfect alternative to refined sugar for the health-conscious it girl. With a low glycemic index, it won't cause blood sugar spikes, making it ideal for a balanced lifestyle.

So now that you have learned how these muffins will basically save you - let's start baking.

Directions:

  1. Preheat oven to 425°F. Line a 12-cup muffin pan with muffin liners or spray with organic coconut oil spray.
  2. In a large bowl, add almond flour, baking powder, baking soda, cinnamon and salt. Whisk to combine.
  3. In a blender, add spinach, monk fruit sugar, almond milk, coconut oil, applesauce, and vanilla. Blend until completely smooth.
  4. Mash your banana on a plate.
  5. Add spinach mixture and mashed banana to the dry ingredients. Whisk or fold until all ingredients are combined. Pour batter evenly into each muffin cup.
  6. Bake for 5 minutes, then reduce heat to 350°F. Bake for an additional 25 minutes, until a toothpick inserted in a muffin comes out clean. Remove the muffins and let them cool in the pan for 10 minutes.
