Here we are again with another Erewhon smoothie recipe, this time making Elsa Hosk's Erewhon smoothie, aka The Blueberry Cobbler Scandi Summer smoothie. Erewhon claims it's inspired by "long summer days and Elsa's favorite dessert." I had really high hopes for this smoothie since blueberries are my favorite fruit and favorite base for smoothies, and of course, it was delicious. It's tough to mess up a smoothie when the ingredients are blueberries and bananas. If it's your first time recreating one of TIGG's Erewhon smoothie recipes, I have measurements for you. But I personally like to just eyeball a smoothie and adjust after for taste and texture if I feel it needs more/less of something, and if you've been making these smoothies since Hailey Bieber's, you can probably do the same, too.
- Start by blending all of the smoothie ingredients together (just the ingredients under smoothie, not topping) until thick and creamy. If you want it thinner, add more oat milk (or non-dairy milk of choice). If you made it too thin, you can quickly thicken it with ice cubes. I personally don't tend to add ice cubes to my smoothies, however, because I feel they just make it icy and then watery a lot quicker.
- To decorate your cup as they do at Erewhon, fill the bottom with coconut cream and then sprinkle blue spirulina into it, but just let the spirulina rest on top of the cream - don't mix it in or apply it to the sides. Then, using a brush (or I guess you could try a spoon/spatula if you don't have a culinary brush on hand), brush the coconut cream up the side in one swoop, like a wave. If you are still confused, you can watch Erewhon's Instagram video to see Elsa do it. Or if you are like me and aren't Instagraming your smoothie, spoon the coconut cream around the cup and dust the spirulina on top, Or altogether skip this step.
- Pour your smoothie into the cup (with or without the decoration - absolutely zero judgment).
- Lastly, for toppings, add a scoop of coconut whip (or whipped coconut cream) to the top of your smoothie. Then, place your organic graham cracker crust in a plastic bag, bang it around a bit to break it up, and sprinkle it on top of your smoothie.
